Pumpkin Pie Bites

I love everything about Thanksgiving.

The big gatherings of family and friends. Remembering all of the reasons we have to be thankful throughout the year. Watching the Macy’s Thanksgiving Day Parade. The table settings and the decorations and the food. ALL of the food.

I even love braving the crowds at the grocery store. Call me crazy, but give me two hours alone without kids and I can make a trip to Whole Foods on the Sunday before Thanksgiving feel like a day at the spa. Why yes, I WILL sample all six wines you’ve chosen for the holiday. There’s brie en croute with cranberry chutney to go with that? Give me all. of. the. things.

But my favorite thing about Thanksgiving is the fact that it rings in the holiday season.

I woke up this past Sunday morning and I could FEEL it. THE HOLIDAYS HAVE BEGUN!

I’ve already queued up my favorite Christmas playlist on Spotify, and you better believe it’s been playing on repeat this whole week while I’ve been working in the kitchen. (Just don’t tell my husband. He has a strict “no Christmas music before Thanksgiving” policy.)

American Flag Pie

American Flag Pie

Summertime is running through sprinklers and splashing in swimming pools. It’s catching fireflies at dusk. It’s long, lazy days and crackling campfires at night. It’s sunflowers and daisies and gardens overflowing with fresh produce. It’s farmer’s markets and pick-your-own berry patches. It’s fruity cocktails on rooftop bars. It’s ice cream cones and shaved ice and popsicles.

And pie.

American Flag Pie

Summertime is all about pie.

Pie overflowing with deliciously fresh, burst-in-your-mouth berries.

Specifically, this pie.

Because what says summer more than this red, white, and blue beauty?

And best of all, it’s two pies in one. So you don’t even have to choose between blueberry and strawberry. You can have both. Because it’s summer and I said so.

Pumpkin Pie

Pumpkin PieEveryone should know how to make a pie.

I’m talking about  a real, homemade pie. One that is reminiscent of grandmothers and Sunday brunch. One with a flaky, buttery crust that you lovingly rolled out yourself. One with sweet fruit that bubbles over.

I tell you this because I love you and I want you to be the best person that you can be.

It’s really important to me.

Pumpkin PieI’ll be honest: pie is not easy. Pie is frustrating. Pie is finicky. Pie is time-consuming. Pie is rarely perfect.

But isn’t that true of most worthwhile things in life?

Knowing how to make a good pie is empowering. It makes you feel like Superwoman. And sometimes you just need to feel like Superwoman. Like on the days when the kids are cranky and the laundry is piling up and you have a huge deadline at work that you just can’t miss. Those are the days you really need to feel like Superwoman. Those are the days you need to be able to make a great pie.
